The word "BIRYANi" (or "BRIYANI" as locals call it) comes from the Persian "BIRIYANI" which means "Fried before cooking". The history of Briyani in the subcontinent dates back to the magnificent Mughal era. As the matter of fact it was brought by Taimur Lung the legendary Mongol monarch & a icon of the mythical Genghis Khan dynasty, from Afghanistan when he invaded India. Ever since, there have been innovations, additions, refinements & enrichments galore which have elevated this real royal repast to pure, pristine haute cuisine. Now more than "30 varieties of Biryani" are prepared throughout the world including the "Arab" and the "Persian" versions.
